As much as we love spending quality time with family and friends, we don’t love the dead animals served at Thanksgiving, which makes the holiday something of a conundrum for vegans. However, things are changing as the veg community has reclaimed the November feast, allowing us to proudly take our seats at dinner tables in front of towering plates of oven-roasted veggies, savory stuffing, chunky mashed potatoes (if you prefer smooth, you’re wrong), and maybe a Tofurky roast. Regardless of your Turk’y-Day ritual, the time to plan is now. Luckily, we’ve scoured Instagram and comprised what we think will help you have the best #VeganThanksgiving ever. 

 1. @essentiallivingfoods’ gluten-free sweet potato quinoa stuffing is studded with apples, Brazil nuts, and cranberries—seasoned with cinnamon, coconut nectar, garlic, and onion. We’d eat this in a sandwich, as stuffing muffins, or by the heaping spoonful.

 

2. @peaceful_provisions made the wise decision to pack all the flavors of Thanksgiving into a perfectly-sized edible bowl. Pretzel stuffing, herb gravy, sautéed kale, and maple-chipotle roasted butternut squash are drizzled with cranberry sauce and sour cream before getting stuffed into cauliflower-potato waffle bowls.

 

3. @greensageblog’s roasted Brussels sprouts with creamy cashew-based lemon-garlic aioli dipping sauce are so good it’s hard to understand why they’d ever be considered just a side dish.

I served small plates at my party, including these roasted Brussels Sprouts with a vegan creamy cashew-based Lemon Garlic Aioli dipping sauce that is out of this world. 4. @fitveganchef not only made kale chips festively-flavored with pumpkin purée, maple syrup, cinnamon, allspice, and nutmeg but she also added a maple-tahini chocolate drizzle. These delicious treats sound too good to be true, but we’re willing to sample one (or three) to verify their authenticity.
