African Bean Soup

What you need:

  • 2 tablespoons soy sauce
  • 1 onion, chopped
  • 2 small sweet potatoes or yams, peeled and diced (about 2 cups)
  • 1 large carrot, thinly sliced
  • 1 celery stalk, thinly sliced
  • 1 red bell pepper, diced
  • 1 15-ounce can crushed tomatoes
  • 3 to 4 cups vegetable stock
  • 1 15-ounce can garbanzo beans
  • 1/2 cup chopped fresh cilantro
  • 3 tablespoons peanut butter
  • 1 to 2 teaspoons curry powder

What you do:

  1. In a large pot over high heat, heat 1/2 cup of water and the soy sauce. Add onion and sweet potatoes. Cook 5 minutes, stirring occasionally.
  2. Add carrot, celery, and pepper. Reduce heat, cover, and cook 3 minutes, stirring occasionally. Stir in the tomatoes, stock, garbanzo beans, and cilantro.
  3. Blend peanut butter with 1/3 cup of water and add it to the soup along with the curry powder. Stir to mix. Cover and simmer 10 minutes. Serve over brown rice.
