Balsamic Green Beans with Crimini Mushrooms

Green beans are a staple vegetable dish that never gets old—but with the tangy addition of balasmic vinegar and hearty crimini mushrooms, the classic side dish might outshine the main course.

Serves 6

What you need:


2 cups (1 pound) green beans, trimmed
1 cup sliced crimini mushrooms
2 teaspoons minced garlic
3/4 cup vegetable broth
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 tablespoons balsamic vinegar

 

What you do:

1. In a large skillet over medium-high heat, add olive oil and garlic and cook for 2 minutes. Add green beans and crimini mushrooms and stir-fry for 4 minutes until beans turn bright green in color.

2. Add vegetable broth, salt, and pepper. Cover and bring to a boil. Reduce heat to medium-low and simmer for 10 minutes.

3. Add balsamic vinegar, continuing to simmer for 15 minutes until liquid has evaporated. Serve immediately.
