Chunky Vegan Brownie Walnut Cookies

These delectable treats embody the best of both worlds, marrying the rich, fudgy essence of a brownie with the irresistible crunch of walnuts.

Is it a brownie? Is it a cookie? It’s BOTH! These cookies from the Craving Vegan cookbook are chewy and fudgy and taste just like brownies with the crunch of walnuts. 

What you need:

1 cup sugar
¾ cup melted vegan butter
½ cup cocoa powder
¼ cup vegan milk 
1 tablespoon ground chia or ground flax
2 teaspoons vanilla extract
½ teaspoon baking powder
½ teaspoon salt
1⅓ cups all-purpose flour
½ cup chopped walnuts 
¼ cup vegan chocolate chips

What you do:

  1. Preheat oven to 350 degrees. Line a large baking sheet with parchment paper or lightly grease.
  2. Into a large bowl, add sugar, butter, cocoa powder, milk, chia, vanilla, baking powder, and salt and mix until combined. Add flour and mix until just combined. Stir in walnuts and chocolate chips.
  3. Scoop 2 tablespoons dough and form into a cookie shape. The cookies will not spread much, so make each desired size and thickness. Bake for 10 to 12 minutes, until edges appear set. Let cool on baking sheet.
