Buttery oat crumble and slow-roasted apples spiked with vanilla bean and cinnamon with melty ice cream make up this dreamy dessert from popular YouTuber Gaz Oakley’s Vegan Christmas cookbook.
What you need:
For the crumble:
5 apples
½ cup coconut sugar
2 tablespoons coconut oil
1 teaspoon vanilla bean paste
2 teaspoon ground cinnamon
For the topping:
½ cup rice flour
¾ cup almond flour
⅛ teaspoon salt
½ cup vegan butter
½ cup coconut sugar
½ cup gluten-free oats
For serving:
1 pint vegan ice cream
¼ cup of fresh mint sprigs
What you do:
- Preheat oven to 350 degrees. For the crumble, core apples, cut three into ⅓-inch cubes and grate remaining two. In a large saucepan over medium heat, add coconut sugar and wait for sugar to melt, about 2 minutes, being careful not to burn. Add coconut oil and grated apple and cook for 3 minutes.
- Stir in vanilla paste and cinnamon, and cook 1 minute while stirring, then add cubed apple. Turn heat down to lowest setting, cover and cook 15 minutes, stirring occasionally.
- For the topping, in a large bowl, place flour, almonds, and salt and stir to combine. Add butter and use fingers to crumble together until mixture becomes like breadcrumbs. Stir in sugar and oats.
- Once apples have softened, pour filling into a 3 x 9-inch baking dish. Cover with crumble topping and bake 15 minutes, or until crumble is golden. Garnish with mint and serve with ice cream.
