Easy Vegan Pistachio Falafel

These super simple, gluten-free falafel have a delicious, nutty flavor from pistachios.

Pair these light, baked pistachio falafel bites with a zesty tahini sauce or plate with a generous scoop of hummus for a delicious Mediterranean-inspired meal. And did you know that pistachios are packed with fiber and protein, help strengthen the immune system, and have been shown to lower risk of type 2 diabetes?

What you need:

½ cup pistachios, soaked for at least 6 hours
½ cup dried chickpeas, soaked for at least 6 hours
1 shallot
½ cup parsley
1 tablespoon olive oil
1 teaspoon cumin
1 teaspoon salt
1 teaspoon paprika

What you do:

  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper. Into a food processor, add all ingredients and blend until creamy.
  2. Scooping out tablespoon-sized scoops, form 8 to 10 falafels and place onto prepared baking sheet. Place in oven and bake 35 minutes or until crisp. Remove from oven and let cool slightly before serving.
