Homemade Vegan Pot Stickers

Does whipping up a batch of homemade pot stickers sound intimidating? Mm-hmm. Are these delicious dumplings as easy as 1-2-3? Yep. Should you make them right this minute, and reap the tasty rewards? Yes!
Makes 24 pot stickers
What you need:
- 1 tablespoon non-hydrogenated margarine
- 1 block firm tofu, drained and cubed
- 1/2 cup edamame beans, shelled
- 1/4 cup shredded carrot
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon hoisin sauce
- 1 teaspoon sesame oil
- 1/4 cup cilantro, chopped
- 1 package dumpling wrappers (round)
- 1/2 cup water
- 1/4 cup vegetable oil
What you do:
- In a skillet over medium-high heat, heat margarine. Add tofu, edamame, carrot, salt, and pepper. Cook for about 5 minutes, stirring occasionally. Add hoisin sauce and sesame oil, and cook for 5 minutes, stirring. Turn off heat and mix in cilantro.
- On a cutting board, lay out dumpling wrappers a few at a time to prevent drying out. Put a heaping teaspoon of filling in the center of each dumpling. Run a wet finger around the filling to moisten the dumpling wrapper. Fold wrapper in half to create a half-moon, and squeeze edges together.
- In a skillet over medium-high heat, heat oil. Fry pot stickers about 3 minutes on each side.
