Stone Fruit with Fresh Mint
So simple it’s hardly a recipe, this fruit medley is fresh and delicious. Make sure to use ripe, in-season fruit.

Serves 4
What you need:
- 8 yellow peaches, nectarines, plums, or apricots, sliced
- 1 teaspoon freshly-squeezed lemon juice
- 1/4 cup sugar
- 1/4 cup spearmint leaves, chopped
- Mint leaves for garnish
What you do:
In a bowl, gently toss fruit with lemon juice, sugar, and chopped mint. Garnish with whole mint leaves.
