The Perfect Gluten-Free Vegan Waffles

These vegan waffles have a gorgeous golden color, and are just lightly sweet with a crispy-tender texture.

Upgrade your brunch game with these dreamy waffles from the Dreena’s Kind Kitchen cookbook. Top with peanut butter, fresh berries, and vegan whipped cream to make them even dreamier.

What you need:

1 cup vegan yogurt
1 cup sliced ripe banana 
1 cup oat flour 
½ cup almond meal  
1½ teaspoons baking powder 
¼ teaspoon salt
2 teaspoons vanilla extract

What you do:

  1. Preheat waffle maker according to manufacturer’s instructions. Into a blender, add yogurt and banana and blend until smooth. In a mixing bowl, stir together oat flour, almond meal, baking powder, and salt. Add yogurt-banana mixture to dry ingredients along with vanilla. Mix to combine. 
  2. When waffle maker is ready, ladle ½ cup batter into each waffle mold. Close lid and let cook for about 5 minutes (time will vary depending on waffle maker). Check waffles, and if more browning, allow to cook another minute. When ready, remove and transfer to a cooling rack. Repeat with remaining batter.
