Vegan Harissa-Spiced Tofu Scramble

Who needs eggs when you have protein-rich tofu? Grab your spices and make this simple brunch dish from the So Vegan in 5 cookbook.

What you need:

3 tablespoons harissa paste
1 teaspoon turmeric
½ teaspoon salt
¼ teaspoon black pepper
1 tablespoon olive oil
1 medium red onion, finely sliced
10 ounces firm tofu, drained and pressed
1 cup arugula

What you do:

  1. In a small bowl, mix together harissa paste, turmeric, salt, and pepper. Set aside. 
  2. In a frying pan over medium heat, warm oil, add onion, and fry for 5 minutes, stirring frequently. Crumble tofu, add to pan, and stir. Pour harissa mixture into pan and stir to coat. Fry for 7 minutes.
  3. Remove pan from heat and top with arugula to wilt, and serve.
