Vegan Moroccan Spicy Carrot Salad

This simple carrot salad is the perfect side for any dish in need of a lightly spicy kick.

The earthy, smoky notes of hot paprika adds pep to his garlicky, zesty side salad from the Sharing Morocco: Exotic Flavors from My Kitchen to Yours cookbook. 

What you need:

8 carrots, peeled                        
3 tablespoons olive oil                        
2 tablespoons minced garlic
½ bunch parsley, chopped
½ teaspoon hot paprika
1 teaspoon ground cumin 
Juice of 1 lemon                    
½ teaspoon salt
½ teaspoon pepper

What you do:

  1. In a medium saucepan, add carrots and cover with water. Bring to a boil and cook until tender, about 10 minutes, then remove from pan, and set aside to cool.
  2. Once cool, slice carrots into ¼-inch rounds. In a medium bowl, combine carrots, olive oil, garlic, parsley, paprika, cumin, lemon juice, salt and pepper, and mix well. Place in refrigerator to chill 30 minutes before serving.
