Simple, Creamy Vegan Tomato Hummus Pasta

This foolproof plant-based pasta requires only a few ingredients and is perfect to add to your weeknight cooking rotation.

It doesn’t get much easier than this easy hummus pasta recipe from Nosh with Micah blogger Micah Siva. Serve with roasted chickpeas, vegan chicken, or saucy meatballs for added protein.

What you need:

2 cups cherry tomatoes
10 cloves garlic
½ cup hummus
2 tablespoons olive oil
1 (16-ounce) box of pasta, cooked to package directions

What you do:

  1. Preheat oven to 375 degrees. To a baking sheet or cast-iron pan, add tomatoes, garlic, hummus, and olive oil.
  2. Bake 45 to 55 minutes or until tomatoes are blistered and soft. Toss with cooked pasta, and serve.
