Walnut Basil Pesto With Zucchini Noodles

Heart-healthy walnuts come together with spicy arugula, garlic, and basil for an Italian treat that’s as easy to make as it is delicious. Whip up this dish using ingredients found in just about every grocery store for an uncomplicated lunch or dinner. Even better? Loaded with libido-enhancing ingredients, this rich, creamy, garlicky vegan noodle dish will keep you feeling slim and sexy, too. Mangia!

What you need:

For the pasta:
5 small zucchini:

For the sauce:
¼ cup walnuts
1 cup arugula
½ cup raw basil leaves
¼ cup hemp seeds
¼ cup nutritional yeast
1 tablespoon lemon juice
1 large clove garlic

What you do:

  1. For the pasta, using a spiralizer, create zucchini into noodles. If you do not have a spiralizing tool, peel zucchini with potato peeler, rotating as you peel for flat, uniform noodles. Place noodles in colander, and set aside.
  2. For the sauce, into a blender, place all ingredients and blend until a thick sauce is achieved. Toss noodles with sauce until coated and serve.
