Two St. Paul Eateries Form Plant-Based Powerhouse

Evan’s Organic Eatery and Eureka Compass Vegan Food will work together for what they hope will become one of the region’s most popular vegan restaurants.

Two recently opened restaurants in St. Paul, MN have combined due to the success of plant-based options at both eateries. This week, chef Colin Anderson—the former chef and owner at Eureka Compass Vegan Food—will begin his new role as chef at Evan’s Organic Eatery, a restaurant known for its soups, salads, and sandwiches. In January, Anderson began preparing jackfruit for Evan’s Organic Eatery’s sandwiches and tacos, which led to 70 percent of profits at Evan’s coming from vegan food. “With the popularity of this item,” Anderson said, “the owners of Evan’s decided it was time to go fully vegan in their menu. Their chef was not interested in going that route and decided to leave effective later in March. They found themselves now wanting to be a vegan, organic restaurant but had no one to lead the development and implementation of a fully vegan menu. I found myself with a fountain of vegan menu ideas, but a limited customer base.” While Anderson is becoming 30-percent partner at Evan’s, he will also transform the original Eureka location into a vegan pizza delivery shop, where he will host pop-ups for cruelty-free businesses.
