This bright and springy Raspberry-Vanilla Chia Jam recipe, from Melissa King’s Easy. Whole. Healthy ingredients like fresh raspberries and protein-rich chia seeds transform a usually sugar-laden fruit product into a nutritious spread that will keep your energy levels up all morning long.

What you need:

3 cups fresh raspberries (or frozen and thawed) 
3 to 4 tablespoons chia seeds
2 tablespoons maple syrup
1 teaspoon ground vanilla beans

What you do:

  1. Into a food processor, blend raspberries. Add remaining ingredients and blend another minute. 
  2. Transfer mixture to a 16-ounce Mason jar and place in the fridge. It should take about 30 minutes to set up. This should keep in the fridge for several weeks, and you may also freeze for up to 6 months.
