Creamy Vegan Almond Hot Chocolate 

Nutty almond butter and irresistible melted chocolate chips make this a hot chocolate recipe that kids will go wild for.

Whether winter, spring, summer, or fall, it’s always a good time for hot chocolate. Make this subtly spiced version from The Colorful Family Cookbook for a crowd-pleaser. Need an extra boost? Swap in coffee for half of the milk. 

What you need:

For the hot chocolate:
4 cups unsweetened almond milk
¼ cup creamy almond butter
¼ cup cocoa powder
¼ cup maple syrup
1 teaspoon ground cinnamon
½ teaspoon vanilla extract
⅛ teaspoon salt
¼ cup vegan chocolate chips

For topping:
Vegan marshmallows
Cinnamon sticks

What you do:

  1. In a small sauce pan over medium-low heat, warm almond milk. Add almond butter, cocoa powder, maple syrup, cinnamon, vanilla extract, and salt, and whisk every 30 seconds until mixture is smooth and almost simmering, 4 to 5 minutes. Add chocolate chips and whisk 1 more minute, until melted.
  2. Transfer to mugs, top with marshmallows, and add a cinnamon stick to each mug to stir with.
