Easy Vegan Banana Coconut Pudding

Silky cashew pudding layered with wafer cookies, banana, and yogurt makes for an easy and delicious dessert.

This foolproof dessert from Nosh with Micah blogger Micah Siva comes together in a flash. Layer in vegan whipped cream, chocolate shavings, or your favorite berries to easily switch it up. 

What you need:

For the pudding:
½ cup canned full-fat coconut milk
½ cup cashews, soaked
3 tablespoons maple syrup
½ banana
1 teaspoon vanilla extract
½ tablespoons ground flax seeds
1 teaspoon chia seeds
¼ teaspoon turmeric
¼ teaspoon salt

To assemble:
16 vegan wafer cookies
1½ bananas, sliced
1 cup plain coconut yogurt

What you do:

  1. For the pudding, in a high-speed blender, add all ingredients and blend until smooth. Let sit 5 to 10 minutes, or until thickened.
  2. To assemble, into 2 serving glasses, layer cookies, pudding, banana slices, and yogurt. Let sit 10 to 15 minutes, or until cookies soften slightly, and then enjoy.
