Creamy Vegan Fudge Popsicles

These rich, chocolaty treats are made with bananas, soy milk, and cocoa powder.

Why buy popsicles when you can so easily make them at home? These frozen treats are creamy, chocolaty, and, yes, healthy.

What you need:

3 cups bananas, cut into 1-inch pieces
2/3 cup soy milk
3 tablespoons cocoa powder
3 tablespoons brown rice syrup or maple syrup
1 teaspoon vanilla extract

What you do:

  1. Place all ingredients in a blender or food processor and blend until smooth.
  2. Pour mixture into 8 molds and insert sticks. Freeze until solid, at least 8 hours or overnight.
  3. To remove ice pops from molds, let sit at room temperature for several minutes or dip molds quickly into hot water. Serve immediately.
  4. Want a twist on your pops? Add mint extract, orange zest, chili powder, or nut butter.
