Tropical Vegan Piña Colada Popsicles

These delightful frozen treats blend together the creaminess of coconut milk, the sweetness of ripe pineapples, and a hint of refreshing citrus. With just a few simple ingredients and a touch of summer magic, you’ll be savoring the flavors of a vacation in every lick of these luscious vegan popsicles. 

What you need:

1 (14-ounce) can light coconut milk
1 cup pineapple chunks, fresh, frozen, or canned
3 tablespoons agave nectar 
1½ teaspoons vanilla extract
½ teaspoon almond or rum extract

What you do:

1. Into a blender or food processor, add all ingredients and blend until smooth.
2. Pour mixture into 8 popsicle molds and insert sticks. Freeze until solid, at least 8 hours or overnight.
