Two-Step Vegan Snickerdoodle Energy Bites

These simple, healthy, protein-rich bites taste just like your favorite Snickerdoodle cookie.

Add chocolate chips, toasted pecans, or shredded coconut to switch up these cookie-inspired energy bites from The Simply Real Health Cookbook

What you need:

½ cup almond butter
3 tablespoons coconut flour
3 tablespoons vegan milk
1 tablespoon ground cinnamon, plus 1 tablespoon for rolling
1 tablespoon maple syrup
1 teaspoon vanilla extract

What you do:

  1. In a medium bowl, combine all ingredients and mix well. In a small bowl, add remaining 1 tablespoon of cinnamon.
  2. Form into balls, then roll each in cinnamon. Store in refrigerator until ready to eat.
