Easy Vegan Chocolate Coconut Overnight Oats
Satiating peanut butter, bittersweet cacao nibs, and buttery shreds of coconut offer a major upgrade to plain oats.

Breakfast doesn’t have to be boring! Adding nourishing, probiotic-rich coconut yogurt and protein-packed chia seeds to these chocolaty oats from the Nourishing Vegan Every Day cookbook take breakfast from basic to decadent.
What you need:
1 cup oats
2 tablespoons chia seeds
¾ cup coconut yogurt, divided
1¼ cups vegan milk
1 teaspoon vanilla extract
2 tablespoons dried coconut
2 tablespoons cacao nibs, plus extra to serve
3 tablespoons peanut butter
1 tablespoon maple syrup
1 teaspoon cocoa powder
¼ teaspoon salt
1 tablespoon coconut flakes
What you do:
- In a Mason jar, stir oats, chia seeds, ½ cup coconut yogurt, milk, dried coconut and cacao nibs. Cover and place in refrigerator overnight.
- In a small bowl, stir peanut butter, maple syrup, cocoa powder, and salt until smooth.
- In two jars, layer oats with yogurt and sauce and top with flaked coconut and extra cacao nibs.
