Chocolate Hazelnut Chia Pudding

This is like eating chocolate pudding for breakfast, but it’s actually super good for you.

Not only is this healthy, breakfast-ready pudding from the Love Your Body Feed Your Soul cookbook full of protein and omegas 3s, it’s indulgent to boot. Bump up the flavor with chopped, toasted hazelnuts and a spoonful of your favorite dairy-free chocolate hazlenut butter—and if you include a few shavings of dark chocolate, we won’t fault you. 

What you need:

3 cups hazelnut milk
1 cup raw cacao powder
½ teaspoon salt
1 teaspoon vanilla extract
1 tablespoon maca powder
3 tablespoons maple syrup
1 cup chia seeds

What you do:

  1. Into a blender, add hazelnut milk, cacao powder, salt, vanilla, maca, and maple syrup, and blend until well combined.
  2. In a medium bowl, combine chia seeds and chocolate milk mixture. Whisk and place in refrigerator to set, whisking again after 10 minutes. Let chill for at least 30 minutes, or overnight, in fridge, then serve.
