Cashew Vanilla Bean Vegan Eggnog

The season of nog has officially begun, and here’s one of our go-to recipes.

Okay, we know this recipe seems a little on the light side, but trust us: one sip of this splendid libation and you’ll forget that the word “nog” was ever preceded by the word “egg.”

What you need:

1 cup cashews
½ cup dates, pitted
½ vanilla bean, split and scraped, or ½ tablespoon vanilla extract
1 teaspoon grated nutmeg
3 cups water

What you do:

Into a blender, place all ingredients. Blend until smooth and serve.
